Since opening on 9th June 2017, Mei Ume has brought a distinctive blend of Chinese and Japanese flavours to London’s fine dining scene. Tucked within the Four Seasons Hotel at Ten Trinity Square, the restaurant strikes a graceful balance between two culinary traditions right in the heart of the City.
The hotel itself occupies the former Port of London Authority building, a Grade II-listed gem of Edwardian Baroque architecture. Carefully restored, the space also hosts La Dame de Pic, a members’ club, and one of Europe’s leading luxury spas. Mei Ume slots seamlessly into this prestigious line-up, offering a dining experience that nods to the building’s global trade history with style and substance.
Designed with Cultural Nuance
When Ed Ng and Terence Ngan from AB Concept, an award-winning design studio based in Hong Kong, were asked to reimagine the space, they set out to create something extraordinary. Known for their work with the Mandarin Oriental, this marked their first foray into the UK. And they certainly made a statement.
Guests are welcomed by a striking feature: a suspended enamelled glass panel adorned with plum blossom motifs from both Chinese and Japanese traditions. Framed by Corinthian columns, it’s a stunning piece that sets the tone and quite literally bridges East and West.
Inside the main dining area, which seats 48, you’ll find:
- A triptych of gilded artwork capturing the energy of a Chinese banquet
- Rich reds and soft pinks, symbolising celebration and fortune
- A silk-laced screen enclosing a private room for 12 to 14 guests
- A 10-seat bar inspired by Japanese astronomy, designed like a contemporary pavilion
Service with a Personal Touch

What truly elevates a meal at Mei Ume is the service. With the warm welcome and the attentive but never overbearing staff, everything runs like clockwork, quietly and with care.
Dishes are introduced with just the right level of detail, drinks topped up without you noticing, and any allergies or preferences are remembered as if by magic. Whether you’re pairing sake or Bordeaux, the sommelier guides with ease, helping you get the most out of every mouthful.
A Culinary Team with Serious Pedigree
At the heart of Mei Ume’s kitchen is a trio of highly respected chefs:
- Tony Truong, formerly of Royal China, leads the Chinese team
- Mum Seok Choi, previously at Sake no Hana, oversees the sushi and sashimi
- Derrick Chen, once of Yauatcha, brings finesse to the dim sum offering
Together, they bring a combined mastery that ensures every dish is a celebration of precision, balance, and flair.
