Niko Romito’s Approach to Italian Cuisine

Da Niko draws on the culinary philosophy of Niko Romito, the chef behind the three-Michelin-starred Reale restaurant in Castel di Sangro. His approach emphasises precision, quality ingredients and a clear expression of traditional Italian flavours.

Through his longstanding collaboration with Bvlgari Hotels & Resorts, Romito has introduced his culinary vision to the brand’s international properties. At Da Niko, this translates into recognisable dishes prepared with careful attention to technique and balance.

The menu incorporates regional influences, fresh seafood, pasta, seasonal vegetables and traditional meat dishes, with several larger plates intended for sharing.

The Da Niko Menu

Da Niko's menu offerings

Da Niko’s menu follows the traditional progression of an Italian meal, beginning with crudi and antipasti before moving into pasta, risotto, main courses and desserts. Familiar Italian favourites feature alongside more elaborate preparations, offering plenty of variety without straying far from the restaurant’s culinary roots.

Crudi and Antipasti

Seafood takes centre stage among the crudi, with Gillardeau oysters from France, Regal Oro oysters from Ireland and Tarbouriech oysters from Italy. Other highlights include amberjack carpaccio with lemon and peperoncino, tuna carpaccio with tomato and basil, and red prawns with ricotta, pink pepper and tarragon.

The antipasti selection includes buffalo mozzarella with tomatoes, fried pizza with tomato and Parmigiano Reggiano, and whipped cod with parsley and lemon. More substantial choices range from Culatello di Zibello ham with toasted brioche and pear to fried baby squid with tartare sauce and a lobster roll with celery and marinated lettuce.

Traditional meat dishes are also represented, including vitello tonnato, featuring milk-fed veal with tuna sauce, and veal meatballs served with parsley sauce.

Pasta, Risotto and Italian Classics

Niko Romito’s signature spaghetti with tomato sauce is one of the menu’s defining dishes, alongside tonnarelli cacio e pepe with Pecorino and black pepper. Lasagne with a light veal ragù offers another familiar favourite.

Other pasta dishes include agnolotti del plin with beef jus, orange and marjoram, mezzi paccheri with langoustines and rosemary, and ricotta and spinach ravioli with manteca butter. Fusilloni with lobster provides a richer seafood option.

The mushroom risotto is finished with Parmigiano Reggiano and balsamic vinegar, while vegetable soup and legume soup with Swiss chard and lemon offer lighter alternatives.

Main Courses and Sharing Dishes

The main courses feature seafood and meat dishes rooted in Italian tradition. Sole is served with lemon, capers and parsley, while cod comes with tomato, potato cream, and Taggiasca olives. The catch of the day, accompanied by cherry tomatoes and roasted potatoes, is designed for sharing.

Meat options include beef tenderloin with green pepper sauce and veal escalope with mushrooms. Piedmontese Col Fiocco fried chicken, served with sautéed escarole and roasted potatoes, is another sharing dish.

The Milanese veal cutlet is particularly fitting for the restaurant’s location. Served with mixed leaves and cherry tomatoes, the 500g portion is intended for at least two diners.

Vegetable accompaniments include gratinated cauliflower with chicory and rosemary, sautéed escarole with pine nuts, raisins and anchovies, and fennel and citrus salad.

Desserts

The dessert selection celebrates traditional Italian favourites, including tiramisù, delizia al limone with sponge cake and lemon custard cream, and zuppa inglese with chocolate mousse, alkermes and custard.

Other choices include an apple tartlet with milk custard, honey sauce and citrus, brioche with zabaione sauce and pistachio ice cream, and chocolate cake with vanilla sauce. Ice creams and sorbets round out the menu.
